A delicious and savory dish featuring pork tenderloin stuffed with a flavorful mixture of spinach and feta cheese.

Ingredients

  • 2 pork tenderloins (about 1 pound each)
  • 1 cup fresh spinach, chopped
  • 4 ounces feta cheese, crumbled
  • 1/2 cup cream cheese, softened
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 375°F.
  2. In a medium bowl, combine the chopped spinach, feta cheese, cream cheese, minced garlic, oregano, salt, and black pepper. Mix until well combined.
  3. Carefully slice each pork tenderloin lengthwise, creating a pocket for the filling. Be sure not to cut all the way through.
  4. Stuff each tenderloin with the spinach and feta mixture, pressing it in gently.
  5. Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the stuffed tenderloins for about 3-4 minutes on each side until browned.
  6. Drizzle balsamic vinegar over the tenderloins and transfer the skillet to the preheated oven. Bake for 20-25 minutes, or until the internal temperature reaches 145°F.
  7. Remove from the oven and let rest for 5 minutes before slicing. Garnish with fresh parsley and serve.

Notes

  • For a spicy kick, add a pinch of red pepper flakes to the filling.
  • You can substitute the spinach with kale or Swiss chard for a different flavor profile.
