A delicious fusion of Korean and American flavors, this Spicy Kimchi Bulgogi Cheesesteak combines marinated beef, kimchi, and provolone cheese in a hoagie roll for a mouthwatering meal.

  • 1 pound beef sirloin, thinly sliced
  • 1 cup kimchi, chopped
  • 1 tablespoon soy sauce
  • 1 tablespoon gochujang (Korean chili paste)
  • 1 tablespoon sesame oil
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • 1 medium onion, sliced
  • 1 bell pepper, sliced
  • 4 hoagie rolls
  • 8 ounces provolone cheese, sliced
  • 2 tablespoons mayonnaise
  • 1 tablespoon sriracha (optional)
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the sliced beef, kimchi, soy sauce, gochujang, sesame oil, garlic, ginger, salt, and pepper. Mix well and let marinate for at least 30 minutes at room temperature or up to 2 hours in the refrigerator for more flavor.
  2. Heat a large skillet over medium-high heat. Add the marinated beef mixture and cook for about 5-7 minutes, stirring frequently, until the beef is cooked through and slightly caramelized.
  3. Add the sliced onion and bell pepper to the skillet. Cook for an additional 3-4 minutes until the vegetables are tender.
  4. While the beef and vegetables are cooking, preheat your oven to 350°F. Cut the hoagie rolls in half lengthwise and spread mayonnaise on the inside of each roll. If you like a little heat, drizzle sriracha on top of the mayonnaise.
  5. Once the beef and vegetables are ready, divide the mixture evenly among the hoagie rolls. Top each with provolone cheese.
  6. Place the filled hoagie rolls on a baking sheet and bake in the preheated oven for about 5-7 minutes, or until the cheese is melted and bubbly.
  7. Remove from the oven, let cool slightly, and serve hot.

Notes

  • For a vegetarian option, substitute the beef with marinated tofu or tempeh.
  • Add sliced jalapeños or a sprinkle of red pepper flakes for extra heat.
