8 ounces glass noodles
2 tablespoons vegetable oil
1 medium onion, sliced
2 cloves garlic, minced
1 bell pepper, sliced (any color)
1 cup shredded carrots
1 cup snap peas
2 green onions, chopped
3 tablespoons soy sauce
1 tablespoon chili sauce (adjust for spice preference)
1 tablespoon sesame oil
1 teaspoon sugar
Salt and pepper to taste
Sesame seeds for garnish (optional)
Instructions
Begin by soaking the glass noodles in hot water for about 15 minutes or until they are soft. Drain and set aside.
In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the sliced onion and minced garlic, sautéing for about 2 minutes until fragrant.
Add the bell pepper, shredded carrots, and snap peas to the skillet. Stir-fry for about 3-4 minutes until the vegetables are tender but still crisp.
Add the soaked glass noodles to the skillet, along with the soy sauce, chili sauce, sesame oil, and sugar. Toss everything together and cook for an additional 2-3 minutes until heated through.
Season with salt and pepper to taste. Stir in the chopped green onions just before serving.
Serve hot, garnished with sesame seeds if desired.
Notes
For added protein, consider adding cooked chicken, shrimp, or tofu to the stir-fry.
Experiment with different vegetables such as broccoli, zucchini, or mushrooms for variety.
