Ingredients

Scale
  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 1 tablespoon soy sauce
  • 1 tablespoon fresh lemon juice
  • 1 pound baby bok choy, halved lengthwise
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. In a large skillet, heat the olive oil and 1 tablespoon of butter over medium heat.
  2. Add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant.
  3. Add the shrimp to the skillet, season with salt and pepper, and cook for 2-3 minutes until they turn pink and opaque.
  4. Stir in the soy sauce and lemon juice, then remove the shrimp from the skillet and set aside.
  5. In the same skillet, add the remaining tablespoon of butter and the baby bok choy, cooking for about 3-4 minutes until tender and slightly wilted.
  6. Return the shrimp to the skillet, tossing everything together for an additional minute to combine flavors.
  7. Serve hot, garnished with chopped green onions.

Notes

  • For added flavor, marinate the shrimp in the soy sauce and lemon juice for 15-30 minutes before cooking.
  • Substitute baby bok choy with spinach or kale for a different green option.
