- 1 pound large shrimp, peeled and deveined
- 2 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon red pepper flakes (adjust to taste)
- 1 tablespoon soy sauce
- 1 tablespoon fresh lemon juice
- 1 pound baby bok choy, halved lengthwise
- Salt and pepper to taste
- Chopped green onions for garnish
- In a large skillet, heat the olive oil and 1 tablespoon of butter over medium heat.
- Add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant.
- Add the shrimp to the skillet, season with salt and pepper, and cook for 2-3 minutes until they turn pink and opaque.
- Stir in the soy sauce and lemon juice, then remove the shrimp from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of butter and the baby bok choy, cooking for about 3-4 minutes until tender and slightly wilted.
- Return the shrimp to the skillet, tossing everything together for an additional minute to combine flavors.
- Serve hot, garnished with chopped green onions.
