  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 cup sour cream
  • 2 tablespoons mayonnaise
  • 2 tablespoons chipotle peppers in adobo sauce, minced
  • 1 tablespoon lime juice
  • 1/2 teaspoon garlic powder
  • Salt to taste

Instructions

  1. Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  2. In a large bowl, combine the ground beef, breadcrumbs, Parmesan cheese, parsley, egg, garlic, onion powder, smoked paprika, cayenne pepper, salt, and black pepper. Mix until just combined, being careful not to overmix.
  3. Form the mixture into meatballs, about 1 inch in diameter, and place them on the prepared baking sheet. Drizzle with olive oil.
  4. Bake in the preheated oven for 20-25 minutes, or until the meatballs are cooked through and browned on the outside.
  5. While the meatballs are baking, prepare the creamy chipotle sauce. In a medium bowl, whisk together the sour cream, mayonnaise, chipotle peppers, lime juice, garlic powder, and salt. Adjust seasoning to taste.
  6. Once the meatballs are done, remove them from the oven and let them cool slightly before serving. Drizzle the creamy chipotle sauce over the meatballs or serve it on the side for dipping.
