1 pound ground beef
1 teaspoon olive oil
1 small onion, diced
2 cloves garlic, minced
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup marinara sauce
8 ounces cooked spaghetti
12 taco shells
1 cup shredded cheddar cheese
1/2 cup sour cream
1/2 cup diced tomatoes
1/4 cup chopped fresh parsley (optional)
Instructions
In a large skillet, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 3-4 minutes.
Add minced garlic and ground beef to the skillet. Cook until the beef is browned and cooked through, breaking it apart with a spoon, about 5-7 minutes.
Stir in Italian seasoning, salt, and black pepper. Pour in the marinara sauce and let it simmer for about 5 minutes.
In a large bowl, combine the cooked spaghetti with the beef mixture, tossing until well coated.
Preheat the oven to 350°F. Arrange taco shells on a baking sheet and fill each shell with the spaghetti mixture.
Top each filled taco with shredded cheddar cheese. Bake in the oven for 10-12 minutes, or until the cheese is melted and bubbly.
Remove from the oven and let cool for a few minutes. Serve topped with sour cream, diced tomatoes, and parsley if desired.
Notes
For a vegetarian option, substitute ground beef with lentils or a meat substitute like Beyond Meat.
Add sliced olives or jalapeños for an extra kick of flavor.
