  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

  • 1/2 cup vegetable oil (for frying)
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour (for gravy)
  • 2 cups milk
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine buttermilk and hot sauce (if using). Add the pork chops, ensuring they are fully submerged. Cover and refrigerate for at least 1 hour, or overnight for best flavor.
  2. In a shallow dish, mix together 1 cup of flour, garlic powder, onion powder, paprika, salt, black pepper, and cayenne pepper.
  3. Remove the pork chops from the buttermilk, allowing excess to drip off. Dredge each chop in the flour mixture, pressing lightly to adhere. Set aside.
  4. In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the pork chops. Fry for about 4-5 minutes per side, or until golden brown and cooked through (internal temperature should reach 145°F). Remove chops and place on a paper towel-lined plate to drain.
  5. In the same skillet, reduce heat to medium and add butter. Once melted, whisk in 2 tablespoons of flour, cooking for about 1 minute until lightly browned.
  6. Gradually whisk in the milk, stirring constantly until the gravy thickens, about 3-5 minutes. Season with salt and pepper to taste.
  7. Serve the fried pork chops drizzled with the creamy gravy.
