Delicious Southern Breakfast Enchiladas filled with sausage, eggs, and topped with creamy sausage gravy.

  • 8 large flour tortillas
  • 1 pound breakfast sausage
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 1 cup shredded cheddar cheese
  • 4 large eggs
  • 1 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • 2 tablespoons all-purpose flour
  • 2 cups milk (for gravy)
  • 1/2 teaspoon Worcestershire sauce
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • Chopped green onions (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a large skillet over medium heat, cook the breakfast sausage until browned, breaking it apart with a spoon. Add the diced onion and bell pepper, cooking until softened, about 5 minutes.
  3. In a bowl, whisk together the eggs, 1 cup of milk, garlic powder, onion powder, salt, black pepper, and cayenne pepper. Pour this mixture into the skillet with the sausage and vegetables. Cook, stirring gently, until the eggs are just set, about 3-4 minutes.
  4. Lay out the flour tortillas and evenly distribute the egg and sausage mixture among them. Sprinkle shredded cheddar cheese on top of the filling, then roll each tortilla tightly and place them seam-side down in the prepared baking dish.
  5. In a separate saucepan, melt 2 tablespoons of butter over medium heat. Whisk in the flour and cook for 1 minute. Gradually add 2 cups of milk, whisking constantly until the mixture thickens. Stir in Worcestershire sauce, black pepper, and salt. Remove from heat.
  6. Pour the sausage gravy over the rolled tortillas in the baking dish. Bake in the preheated oven for 20-25 minutes, until heated through and slightly golden on top.
  7. Remove from the oven and let cool for a few minutes. Garnish with chopped green onions before serving.

  • For a spicier kick, add diced jalapeños to the sausage mixture.
