- 2 large zucchinis

- 3 cloves garlic, minced
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon Italian seasoning (optional)
- ½ cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- Optional: fresh parsley or chili flakes
- Cut each zucchini lengthwise into thick slices (about 1–1.5 cm thick) to resemble “steaks.”
- Pat dry with paper towels to remove excess moisture.
- Brush both sides with olive oil.
- Rub with minced garlic, salt, pepper, and Italian seasoning.
- Heat a grill pan or skillet over medium heat.
- Cook zucchini steaks for 3–4 minutes per side until soft, lightly golden, and tender (not mushy).
- Lower the heat.
- Sprinkle mozzarella and Parmesan evenly over the zucchini.
- Cover the pan and cook for 1–2 minutes until cheese melts and becomes chewy.
- Garnish with parsley or chili flakes if desired.
- Serve hot as a side dish or light main.
Notes
- For extra flavor, consider adding other herbs or spices.
- Ensure not to overcook the zucchini to maintain its texture.
