Deliciously soft and chewy zucchini steaks topped with cheesy garlic goodness.

Ingredients

  • 2 large zucchinis
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon Italian seasoning (optional)
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • Optional: fresh parsley or chili flakes

Instructions

  1. Cut each zucchini lengthwise into thick slices (about 1–1.5 cm thick) to resemble “steaks.”
  2. Pat dry with paper towels to remove excess moisture.
  3. Brush both sides with olive oil.
  4. Rub with minced garlic, salt, pepper, and Italian seasoning.
  5. Heat a grill pan or skillet over medium heat.
  6. Cook zucchini steaks for 3–4 minutes per side until soft, lightly golden, and tender (not mushy).
  7. Lower the heat.
  8. Sprinkle mozzarella and Parmesan evenly over the zucchini.
  9. Cover the pan and cook for 1–2 minutes until cheese melts and becomes chewy.
  10. Garnish with parsley or chili flakes if desired.
  11. Serve hot as a side dish or light main.
