2 pounds boneless, skinless chicken breasts
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon olive oil
1 cup sour cream
1 cup shredded cheddar cheese
1/2 cup cream of chicken soup
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon paprika
1/4 cup chopped fresh parsley (optional for garnish)
Instructions
Preheat your oven to 375°F (190°C).
Season the chicken breasts with salt and black pepper on both sides.
In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the chicken breasts and sear for about 5 minutes on each side, until golden brown.
In a mixing bowl, combine the sour cream, shredded cheddar cheese, cream of chicken soup, garlic powder, onion powder, and paprika. Mix until well combined.
Pour the sour cream mixture over the seared chicken in the skillet, ensuring the chicken is well coated.
Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
Remove from the oven and let it rest for 5 minutes. Garnish with chopped parsley if desired before serving.
Notes
For added flavor, marinate the chicken in a mixture of olive oil, lemon juice, and herbs for 30 minutes before cooking.
Substitute the cheddar cheese with pepper jack or mozzarella for a different flavor profile.
