1 pound ground beef
1 cup crushed tortilla chips
1/2 cup shredded cheddar cheese
1/2 cup cream cheese, softened
1/4 cup diced jalapeños (fresh or pickled)
1/4 cup diced onion
1/4 cup milk
1 large egg
2 teaspoons garlic powder
1 teaspoon smoked paprika
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup barbecue sauce (for topping)
Instructions
Preheat your oven to 350°F.
In a large mixing bowl, combine the ground beef, crushed tortilla chips, cheddar cheese, cream cheese, jalapeños, onion, milk, egg, garlic powder, smoked paprika, salt, and black pepper. Mix until just combined; do not overmix.
Transfer the meat mixture to a loaf pan and shape it into a loaf.
Spread the barbecue sauce evenly over the top of the meatloaf.
Bake in the preheated oven for 1 hour, or until the internal temperature reaches 160°F.
Let the meatloaf rest for 10 minutes before slicing.
Notes
For a spicier kick, add more jalapeños or a dash of hot sauce to the meat mixture.
You can substitute ground turkey or chicken for a leaner option.
Serve with a side of roasted vegetables or a fresh salad for a complete meal.
