A creamy and flavorful soup made with broccoli and smoky Gouda cheese, perfect for a comforting meal.

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups broccoli florets (about 1 large head)
  • 4 cups vegetable broth
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded smoked Gouda cheese
  • 1/2 cup heavy cream
  • 1 tablespoon lemon juice

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until softened.
  2. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  3. Add the broccoli florets, vegetable broth, smoked paprika, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the broccoli is tender.
  4. Remove the pot from heat and use an immersion blender to puree the soup until smooth. Alternatively, carefully transfer the soup in batches to a blender and blend until smooth.
  5. Return the pureed soup to the pot over low heat. Stir in the smoked Gouda cheese and heavy cream until the cheese is melted and the soup is creamy.
  6. Add the lemon juice and stir to combine. Taste and adjust seasoning if necessary.
  7. Serve hot, garnished with extra cheese or a sprinkle of smoked paprika if desired.

Notes

  • For a lighter version, substitute the heavy cream with half-and-half or coconut milk.
  • Add cooked chicken or sausage for extra protein and heartiness.
