Smoky Bourbon BBQ Meatloaf Cupcakes are a delicious twist on traditional meatloaf, served in cupcake form and topped with a smoky bourbon barbecue sauce.

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped onion
  • 1/4 cup chopped bell pepper
  • 1/4 cup milk
  • 1 large egg
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup barbecue sauce
  • 1/4 cup bourbon (optional)
  • 1/4 cup chopped fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 350°F. Line a muffin tin with cupcake liners or spray with non-stick cooking spray.
  2. In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, onion, bell pepper, milk, egg, Worcestershire sauce, garlic powder, smoked paprika, salt, and black pepper. Mix until just combined; do not overmix.
  3. Scoop the meat mixture into the prepared muffin tin, filling each cup about 3/4 full.
  4. In a small bowl, mix together the barbecue sauce and bourbon (if using). Spoon a tablespoon of the sauce mixture over each meatloaf cupcake.
  5. Bake in the preheated oven for 20-25 minutes, or until the meatloaf cupcakes are cooked through and reach an internal temperature of 160°F.
  6. Remove from the oven and let cool for a few minutes. Garnish with chopped parsley before serving.

Notes

  • For a spicier kick, add 1/2 teaspoon of cayenne pepper to the meat mixture.
  • You can also substitute ground turkey or chicken for a leaner option.
  • Serve with a side of coleslaw or a green salad for a complete meal.
