2 pounds potatoes, peeled and diced
1 pound smoked sausage, sliced
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
1/2 cup sour cream
1/2 cup milk
1/4 cup chopped green onions
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon black pepper
1/2 teaspoon salt
1 tablespoon olive oil
Instructions
Preheat the oven to 375°F.
In a large pot, bring salted water to a boil. Add the diced potatoes and cook for about 10-12 minutes, or until fork-tender. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add the sliced smoked sausage and cook until browned, about 5-7 minutes.
In a large mixing bowl, combine the cooked potatoes, browned sausage, cheddar cheese, mozzarella cheese, sour cream, milk, green onions, garlic powder, onion powder, black pepper, and salt. Mix until well combined.
Transfer the mixture to a greased 9×13-inch baking dish, spreading it evenly.
Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
Let it cool for 5 minutes before serving.
Notes
For a spicier kick, add diced jalapeños or a pinch of cayenne pepper to the mixture.
You can substitute the smoked sausage with turkey sausage or a plant-based sausage for a lighter or vegetarian option.
