2 pounds boneless, skinless chicken thighs
1 cup coconut milk
1/2 cup creamy peanut butter
1/4 cup soy sauce
1/4 cup honey
2 tablespoons lime juice
2 tablespoons red curry paste
4 cloves garlic, minced
1 tablespoon fresh ginger, grated
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup chopped green onions (for garnish)
1/4 cup chopped peanuts (for garnish)
Instructions
Place the chicken thighs in the slow cooker.
In a medium bowl, whisk together the coconut milk, peanut butter, soy sauce, honey, lime juice, red curry paste, garlic, ginger, salt, and black pepper until smooth.
Pour the peanut sauce over the chicken in the slow cooker, ensuring the chicken is well coated.
Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and cooked through.
Once cooked, shred the chicken in the slow cooker using two forks and stir to combine with the sauce.
Serve hot, garnished with chopped green onions and peanuts.
Notes
For a spicier dish, add sliced jalapeños or a dash of sriracha to the sauce.
Serve over rice or quinoa for a complete meal, or use lettuce wraps for a low-carb option.
