2 pounds boneless, skinless chicken thighs
1 cup sweet chili sauce
1/4 cup soy sauce
2 tablespoons rice vinegar
1 tablespoon minced garlic
1 tablespoon minced ginger
1/2 teaspoon black pepper
1/2 teaspoon red pepper flakes (optional)
1 cup bell peppers, sliced (any color)
1 cup onion, sliced
2 green onions, chopped (for garnish)
Cooked rice or quinoa (for serving)
Instructions
Place the chicken thighs in the slow cooker.
In a separate bowl, mix together the sweet chili sauce, soy sauce, rice vinegar, minced garlic, minced ginger, black pepper, and red pepper flakes (if using).
Pour the sauce mixture over the chicken in the slow cooker.
Add the sliced bell peppers and onion on top of the chicken.
Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and fully cooked.
Once cooked, shred the chicken in the slow cooker using two forks and mix it with the sauce and vegetables.
Serve over cooked rice or quinoa and garnish with chopped green onions.
Notes
For a spicier version, add more red pepper flakes or a diced jalapeño.
You can substitute the chicken thighs with chicken breasts for a leaner option.
