2 pounds bone-in, skin-on chicken thighs
1/2 cup honey
1/4 cup soy sauce
1/4 cup ketchup
4 cloves garlic, minced
1 tablespoon apple cider vinegar
1 teaspoon ground ginger
1/2 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional)
2 tablespoons cornstarch
2 tablespoons water
Chopped green onions for garnish (optional)
Instructions
Place the chicken thighs in the slow cooker.
In a medium bowl, whisk together honey, soy sauce, ketchup, minced garlic, apple cider vinegar, ground ginger, black pepper, and red pepper flakes (if using).
Pour the sauce over the chicken thighs, making sure they are well coated.
Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and cooked through.
Once cooked, remove the chicken thighs from the slow cooker and set aside.
In a small bowl, mix cornstarch and water to create a slurry. Stir this into the remaining sauce in the slow cooker.
Cover and cook on high for an additional 15-20 minutes, or until the sauce has thickened.
Return the chicken to the slow cooker and coat with the thickened sauce.
Serve hot, garnished with chopped green onions if desired.
Notes
For a healthier option, use skinless chicken thighs or chicken breasts.
Add vegetables like bell peppers or broccoli to the slow cooker for a complete meal.
