1 pound smoked sausage, sliced into 1-inch pieces
1 medium onion, diced
2 cloves garlic, minced
1 tablespoon curry powder
1 teaspoon ground ginger
1 can (14 ounces) coconut milk
1 can (14 ounces) diced tomatoes, undrained
1 cup chicken broth
1 cup frozen peas
2 tablespoons soy sauce
Salt and pepper to taste
Fresh cilantro for garnish (optional)
Instructions
In a slow cooker, combine the sliced sausage, diced onion, minced garlic, curry powder, and ground ginger. Stir to mix well.
Pour in the coconut milk, diced tomatoes (with their juice), and chicken broth. Stir until all ingredients are well combined.
Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the sausage is heated through and the flavors meld together.
About 30 minutes before serving, stir in the frozen peas and soy sauce. Season with salt and pepper to taste.
Serve hot, garnished with fresh cilantro if desired.
Notes
For a spicier version, add a diced jalapeño or a teaspoon of red pepper flakes to the slow cooker.
Substitute the smoked sausage with chicken sausage or turkey sausage for a leaner option. You can also add diced vegetables like bell peppers or carrots for extra nutrition.
