  • 2 pounds beef short ribs
  • 1 cup soy sauce
  • 1/2 cup brown sugar
  • 1/4 cup rice vinegar
  • 1/4 cup hoisin sauce
  • 2 tablespoons sesame oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon red pepper flakes (optional)
  • 1 pound udon noodles
  • 2 green onions, sliced (for garnish)
  • Sesame seeds (for garnish)

Instructions

  1. In a slow cooker, combine soy sauce, brown sugar, rice vinegar, hoisin sauce, sesame oil, garlic, ginger, and red pepper flakes. Stir until well mixed.
  2. Add the beef short ribs to the slow cooker, ensuring they are well coated with the sauce. Cover and cook on low for 6-8 hours or until the meat is tender and easily pulls away from the bone.
  3. About 30 minutes before the ribs are done, cook the udon noodles according to package instructions. Drain and set aside.
  4. Once the ribs are cooked, carefully remove them from the slow cooker and set them on a serving platter.
  5. Strain the sauce from the slow cooker into a saucepan and bring to a simmer over medium heat. Cook for about 5-10 minutes until slightly thickened.
  6. Serve the beef ribs over a bed of udon noodles, drizzled with the thickened sauce. Garnish with sliced green onions and sesame seeds.

  • For a spicier kick, add more red pepper flakes or a splash of sriracha to the sauce.
