2 to 3 pounds beef loin roast
1 cup apricot preserves
1/4 cup soy sauce
1/4 cup apple cider vinegar
2 tablespoons Dijon mustard
1 tablespoon minced garlic
1 teaspoon ground ginger
1/2 teaspoon black pepper
1/2 teaspoon salt
1 tablespoon cornstarch (optional, for thickening)
2 tablespoons water (optional, for thickening)
Instructions
Place the beef loin roast in the slow cooker.
In a medium bowl, combine the apricot preserves, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, ground ginger, black pepper, and salt. Mix well.
Pour the apricot mixture over the beef loin in the slow cooker, ensuring it is well coated.
Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the meat is tender and easily shreds with a fork.
If you prefer a thicker sauce, mix the cornstarch with water in a small bowl to create a slurry. About 30 minutes before serving, stir the slurry into the slow cooker and let it cook on high for an additional 30 minutes.
Once cooked, remove the beef from the slow cooker and let it rest for a few minutes before slicing. Serve with the apricot glaze drizzled over the top.
Notes
For added flavor, consider marinating the beef loin in the apricot glaze for a few hours or overnight before cooking.
You can also substitute the apricot preserves with peach or mango preserves for a different fruit flavor.
