2 to 3 pounds beef loin roast
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon olive oil
1 cup apricot preserves
1/4 cup soy sauce
1/4 cup apple cider vinegar
2 cloves garlic, minced
1 teaspoon ground ginger
1/2 teaspoon crushed red pepper flakes (optional)
1 medium onion, sliced
1 cup baby carrots
Instructions
Season the beef loin roast with salt and black pepper. In a large skillet, heat olive oil over medium-high heat. Sear the roast on all sides until browned, about 3-4 minutes per side. Transfer the roast to the slow cooker.
In a bowl, mix together apricot preserves, soy sauce, apple cider vinegar, minced garlic, ground ginger, and crushed red pepper flakes (if using). Pour the mixture over the beef in the slow cooker.
Add sliced onion and baby carrots around the roast in the slow cooker.
Cover and cook on low for 6-8 hours or until the beef is tender and easily shredded with a fork.
Once cooked, remove the beef from the slow cooker and let it rest for a few minutes before slicing. Serve with the vegetables and drizzle with the apricot glaze from the slow cooker.
Notes
For a thicker glaze, remove the beef after cooking and simmer the sauce in a saucepan over medium heat until it reduces to your desired consistency.
Try adding sliced bell peppers or mushrooms to the slow cooker for additional flavor and nutrition.
