2 tablespoons olive oil
1 pound ground beef (or ground turkey)
1 small onion, diced
1 bell pepper, diced
2 cloves garlic, minced
1 teaspoon Worcestershire sauce
1 cup ketchup
1 teaspoon mustard
1 teaspoon brown sugar
1 teaspoon chili powder
1 teaspoon salt
1/2 teaspoon black pepper
4 medium potatoes, diced (about 4 cups)
1 cup shredded cheddar cheese
2 green onions, sliced (for garnish)
Instructions
Heat the olive oil in a large skillet over medium heat. Add the ground beef and cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain any excess fat if necessary.
Add the diced onion and bell pepper to the skillet. Sauté for about 3-4 minutes until the vegetables are softened.
Stir in the minced garlic and cook for an additional 1 minute until fragrant.
Add the Worcestershire sauce, ketchup, mustard, brown sugar, chili powder, salt, and black pepper. Mix well and let it simmer for about 5 minutes.
While the mixture simmers, in a separate pot, boil the diced potatoes in salted water until fork-tender, about 10-12 minutes. Drain and set aside.
Once the meat mixture has thickened slightly, gently fold in the cooked potatoes until well combined.
Sprinkle the shredded cheddar cheese over the top and cover the skillet. Let it cook for another 2-3 minutes until the cheese is melted.
Remove from heat and garnish with sliced green onions before serving.
Notes
For a vegetarian version, substitute the ground beef with lentils or a plant-based meat alternative.
Add a splash of hot sauce for extra heat or top with pickles for a tangy crunch.
