A delicious and easy recipe for skillet butter and garlic mushrooms and cauliflower, perfect as a side dish or a light meal.

Ingredients

  • 2 cups cauliflower florets
  • 8 ounces mushrooms, sliced
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • 1 tablespoon lemon juice

Instructions

  1. In a large skillet, melt the butter over medium heat.
  2. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  3. Add the sliced mushrooms to the skillet and cook for 5-7 minutes, stirring occasionally, until they are browned and tender.
  4. Stir in the cauliflower florets, salt, and black pepper. Cook for an additional 8-10 minutes, stirring occasionally, until the cauliflower is tender and slightly golden.
  5. Remove from heat and drizzle with lemon juice. Toss to combine.
  6. Garnish with fresh parsley before serving.

Notes

  • For a spicy kick, add a pinch of red pepper flakes while sautéing the garlic.
  • You can substitute olive oil for butter for a dairy-free version.
