Delicious and crispy shrimp veggie fritters, perfect as an appetizer or snack.

  • 1 cup raw shrimp, peeled and deveined, chopped
  • 1 cup all-purpose flour
  • 1/2 cup water
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup green onions, finely chopped
  • 1/2 cup carrots, grated
  • 1/2 cup bell pepper, finely chopped
  • 1/4 cup cilantro, chopped
  • Vegetable oil for frying

Instructions

  1. In a large mixing bowl, combine the flour, baking powder, salt, and black pepper. Mix well.
  2. Gradually add the water to the dry ingredients, stirring until a smooth batter forms.
  3. Fold in the chopped shrimp, green onions, grated carrots, bell pepper, and cilantro until evenly distributed.
  4. Heat about 1 inch of vegetable oil in a frying pan over medium heat.
  5. Once the oil is hot, drop spoonfuls of the batter into the oil, flattening them slightly with the back of the spoon.
  6. Fry the fritters for about 3-4 minutes on each side or until golden brown and crispy.
  7. Remove the fritters from the oil and place them on paper towels to drain excess oil.
  8. Serve warm with your favorite dipping sauce.

Notes

  • For a spicier kick, add a teaspoon of chili flakes or finely chopped jalapeños to the batter.
  • Substitute the shrimp with cooked crab meat or diced chicken for a different flavor profile.
