- 1 cup raw shrimp, peeled and deveined, chopped
- 1 cup all-purpose flour
- 1/2 cup water
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup green onions, finely chopped
- 1/2 cup carrots, grated
- 1/2 cup bell pepper, finely chopped
- 1/4 cup cilantro, chopped
- Vegetable oil for frying
- In a large mixing bowl, combine the flour, baking powder, salt, and black pepper. Mix well.
- Gradually add the water to the dry ingredients, stirring until a smooth batter forms.
- Fold in the chopped shrimp, green onions, grated carrots, bell pepper, and cilantro until evenly distributed.
- Heat about 1 inch of vegetable oil in a frying pan over medium heat.
- Once the oil is hot, drop spoonfuls of the batter into the oil, flattening them slightly with the back of the spoon.
- Fry the fritters for about 3-4 minutes on each side or until golden brown and crispy.
- Remove the fritters from the oil and place them on paper towels to drain excess oil.
- Serve warm with your favorite dipping sauce.
Notes
- For a spicier kick, add a teaspoon of chili flakes or finely chopped jalapeños to the batter.
- Substitute the shrimp with cooked crab meat or diced chicken for a different flavor profile.
