4 (6-ounce) salmon fillets, skinless
8 ounces shrimp, peeled and deveined
1/2 cup cream cheese, softened
1/4 cup breadcrumbs
2 tablespoons fresh parsley, chopped
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper, to taste
4 tablespoons butter
2 cloves garlic, minced
Juice of 1 lemon
Lemon wedges, for serving
Instructions
Preheat the oven to 375°F (190°C).
In a medium bowl, combine the shrimp, cream cheese, breadcrumbs, parsley, garlic powder, onion powder, salt, and pepper. Mix until well combined.
Using a sharp knife, create a pocket in each salmon fillet by slicing horizontally, being careful not to cut all the way through.
Stuff each salmon fillet with the shrimp mixture, pressing gently to secure the filling.
Place the stuffed salmon fillets on a baking sheet lined with parchment paper.
In a small saucepan, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant. Stir in the lemon juice and remove from heat.
Drizzle the lemon garlic butter sauce over the stuffed salmon fillets.
Bake in the preheated oven for 20-25 minutes, or until the salmon is cooked through and flakes easily with a fork.
Serve the salmon with lemon wedges and drizzle any remaining sauce over the top.
Notes
For added flavor, consider mixing in some grated Parmesan cheese with the shrimp filling.
Substitute the shrimp with crab meat or cooked lobster for a luxurious twist.
