1 pound shrimp, peeled and deveined
1 pound smoked sausage, sliced
1 cup long-grain white rice
1 medium onion, diced
1 green bell pepper, diced
2 celery stalks, diced
3 cloves garlic, minced
4 cups chicken broth
2 teaspoons Cajun seasoning
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons vegetable oil
1/4 cup green onions, chopped (for garnish)
Instructions
In a large skillet, heat the vegetable oil over medium heat. Add the sliced sausage and cook until browned, about 5-7 minutes. Remove the sausage from the skillet and set aside.
In the same skillet, add the diced onion, bell pepper, celery, and garlic. Sauté until the vegetables are softened, about 5 minutes.
Stir in the rice and cook for an additional 2 minutes, allowing it to toast slightly.
Add the chicken broth, Cajun seasoning, thyme, salt, and black pepper. Bring to a boil, then reduce heat to low. Cover and simmer for 15 minutes.
After 15 minutes, stir in the shrimp and cooked sausage. Cover and cook for an additional 5-7 minutes, or until the shrimp are pink and the rice is tender.
Remove from heat and let sit, covered, for 5 minutes. Fluff the rice with a fork and garnish with chopped green onions before serving.
Notes
For a spicier kick, add diced jalapeños or a few dashes of hot sauce to the vegetable mixture.
Substitute the shrimp with chicken or turkey for a different protein option, adjusting the cooking time as necessary.
