A flavorful one-pan dish featuring shrimp and rice cooked with Cajun spices and vegetables.

  • 1 pound large shrimp, peeled and deveined
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 1 green bell pepper, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup frozen peas
  • 2 green onions, sliced (for garnish)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion, green bell pepper, and celery. Sauté for about 5 minutes until the vegetables are softened.
  2. Stir in the minced garlic, Cajun seasoning, smoked paprika, dried thyme, salt, and pepper. Cook for an additional 1-2 minutes until fragrant.
  3. Add the rice to the skillet and stir to coat it with the vegetable mixture. Pour in the chicken broth and bring to a boil.
  4. Reduce the heat to low, cover the skillet, and simmer for 15 minutes.
  5. After 15 minutes, add the shrimp and frozen peas to the skillet. Stir gently to combine, then cover and cook for another 5-7 minutes, or until the shrimp are pink and cooked through.
  6. Remove from heat and let it sit for a few minutes before serving. Garnish with sliced green onions.

Notes

  • For added heat, include diced jalapeños or a dash of hot sauce when sautéing the vegetables.
  • Substitute the shrimp with cooked chicken or sausage for a different protein option.
