1 lb raw shrimp, peeled and deveined
½ cup breadcrumbs
¼ cup mayonnaise
¼ cup green onions, finely chopped
1 tbsp Dijon mustard
1 egg
1 clove garlic, minced
½ tsp salt
¼ tsp black pepper
1 tbsp lemon juice
1–2 tbsp olive oil (for cooking)
Instructions
Pat shrimp dry and finely chop (or pulse briefly in a food processor—don’t puree).
In a bowl, combine shrimp, breadcrumbs, mayonnaise, green onions, Dijon mustard, egg, garlic, salt, pepper, and lemon juice. Mix gently until just combined.
Divide mixture into 4–6 patties. Chill for 15–20 minutes to help them hold together.
Heat olive oil in a skillet over medium heat. Cook patties for 3–4 minutes per side until golden and cooked through.
Serve on buns with lettuce, tomato, and tartar sauce or garlic mayo.
Notes
For a spicier kick, add some chopped jalapeños to the mixture.
These burgers can be grilled instead of pan-fried for a smoky flavor.
Leftover patties can be stored in the refrigerator for up to 2 days.
