1 pound raw shrimp, peeled and deveined
1/2 cup breadcrumbs
1/4 cup fresh cilantro, chopped
1/4 cup green onions, chopped
1 large egg
1 teaspoon garlic powder
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil (for cooking)
2 ripe avocados
1 lime, juiced
1/4 teaspoon salt
1/4 cup diced tomatoes
1/4 cup red onion, finely chopped
1 tablespoon fresh cilantro, chopped
Instructions
In a food processor, pulse the shrimp until coarsely chopped.
In a large bowl, combine the chopped shrimp, breadcrumbs, cilantro, green onions, egg, garlic powder, paprika, salt, and black pepper. Mix until well combined.
Form the mixture into patties, about 1/2 inch thick.
Heat olive oil in a skillet over medium heat.
Cook the shrimp patties for 3-4 minutes on each side, or until golden brown and cooked through.
While the patties are cooking, prepare the guacamole by mashing the avocados and mixing in lime juice, salt, diced tomatoes, red onion, and cilantro until well combined.
Serve the shrimp burgers on buns or lettuce wraps, topped with guacamole.
Notes
For added flavor, try adding a teaspoon of cumin to the shrimp mixture.
You can also substitute the shrimp with crab meat for a different seafood twist.
