8 lasagna noodles
1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
1 pound shrimp, peeled and deveined
1 pound scallops, cleaned and chopped
1 cup ricotta cheese
1 cup mozzarella cheese, shredded
1 cup Parmesan cheese, grated
2 cups spinach, fresh
2 cups marinara sauce
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and pepper to taste
1 cup heavy cream
Instructions
Preheat the oven to 375°F.
Cook the lasagna noodles according to package instructions until al dente. Drain and set aside.
In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until the onion is translucent, about 3-4 minutes.
Add the shrimp and scallops, cooking until they are just opaque, about 3-5 minutes. Stir in the spinach, cooking until wilted. Season with oregano, basil, salt, and pepper. Remove from heat.
In a mixing bowl, combine ricotta cheese, half of the mozzarella cheese, and half of the Parmesan cheese. Mix well and set aside.
Spread a thin layer of marinara sauce on the bottom of a 9×13-inch baking dish. Layer 3 lasagna noodles over the sauce.
Spread half of the seafood mixture over the noodles, followed by half of the ricotta mixture. Pour 1/3 of the heavy cream over the ricotta layer.
Repeat the layers, finishing with the remaining noodles, marinara sauce, and the rest of the heavy cream.
Top with the remaining mozzarella and Parmesan cheeses. Cover the dish with aluminum foil and bake for 25 minutes.
Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
Let the lasagna cool for 10 minutes before slicing. Serve warm.
Notes
For a lighter version, substitute the heavy cream with half-and-half or use low-fat cheeses.
You can also add other seafood like crab or lobster for a luxurious twist.
