  • 1/4 cup soy sauce
  • 2 tablespoons cornstarch
  • 1 tablespoon vegetable oil
  • 1 tablespoon sesame oil
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 bunch scallions, chopped (about 1 cup)
  • 1 red bell pepper, sliced
  • 1 cup snap peas
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine the chicken pieces with soy sauce and cornstarch. Mix well and let marinate for 15 minutes.
  2. Heat vegetable oil and sesame oil in a large skillet or wok over medium-high heat.
  3. Add the marinated chicken to the skillet and cook for about 5-7 minutes, stirring frequently, until the chicken is browned and cooked through.
  4. Add the minced garlic and ginger to the skillet, cooking for an additional 1-2 minutes until fragrant.
  5. Stir in the scallions, red bell pepper, and snap peas. Cook for another 3-4 minutes until the vegetables are tender-crisp.
  6. Drizzle rice vinegar and honey over the stir-fry, mixing well to combine. Season with salt and pepper to taste.
  7. Serve hot over rice or noodles.
