1 tablespoon olive oil
8 ounces flank steak, thinly sliced
Salt and pepper, to taste
4 large eggs
4 slices American cheese
4 English muffins, split and toasted
Optional: hot sauce, for serving
Instructions
Heat the olive oil in a skillet over medium-high heat. Season the flank steak with salt and pepper, then add it to the skillet. Cook for about 3-4 minutes on each side until browned and cooked to your desired doneness. Remove from the skillet and let rest for a few minutes before slicing.
In the same skillet, crack the eggs and cook them sunny-side up or to your preference. Season with salt and pepper. Place a slice of American cheese on top of each egg during the last minute of cooking to melt.
Assemble the sandwiches by placing a few slices of steak on the bottom half of each toasted English muffin. Top with a cheesy egg and the other half of the muffin.
Serve immediately, adding hot sauce if desired.
Notes
For a spicier kick, add sliced jalapeños or a sprinkle of cayenne pepper to the eggs while cooking.
Substitute the flank steak with cooked sausage patties or bacon for a different flavor profile.
