3 cups stuffing mix
1 ½ cups chicken or vegetable broth
1 cup cooked turkey or chicken, shredded
1 cup gravy (store-bought or homemade)
1 cup shredded cheddar cheese
1 teaspoon dried thyme
1 teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon black pepper
2 large eggs
¼ cup chopped fresh parsley (optional)
Instructions
Preheat your oven to 350°F. Grease a standard muffin tin with cooking spray or line with muffin liners.
In a large bowl, combine the stuffing mix and chicken or vegetable broth. Stir until the stuffing is evenly moistened. Let it sit for about 5 minutes to absorb the liquid.
Add the shredded turkey or chicken, half of the gravy, cheddar cheese, thyme, garlic powder, onion powder, black pepper, and eggs to the stuffing mixture. Mix well until all ingredients are combined.
Scoop about ¼ cup of the stuffing mixture into each muffin cup, pressing it down slightly. Make a small well in the center of each muffin and fill it with about 1 tablespoon of the remaining gravy. Top with an additional spoonful of stuffing to cover the gravy.
Bake in the preheated oven for 20-25 minutes, or until the muffins are golden brown and firm to the touch. Let them cool in the pan for 5 minutes before transferring to a wire rack.
Serve warm, garnished with chopped parsley if desired.
Notes
For a vegetarian version, omit the turkey or chicken and use vegetable broth and a plant-based gravy.
Add diced vegetables like celery or carrots to the stuffing mixture for extra flavor and nutrition.
