2 tablespoons olive oil
1 large onion, thinly sliced
1 teaspoon salt
1 teaspoon sugar
1 teaspoon dried thyme
1 pound ground pork sausage
1 cup shredded Gruyère cheese
1 package (1 pound) puff pastry, thawed
1 egg, beaten (for egg wash)
Instructions
In a large skillet, heat the olive oil over medium heat. Add the sliced onion, salt, and sugar. Cook, stirring occasionally, for about 15-20 minutes until the onions are caramelized and golden brown. Stir in the dried thyme and remove from heat. Let cool slightly.
In a mixing bowl, combine the ground pork sausage and the cooled caramelized onions. Mix until well combined.
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
On a lightly floured surface, roll out the puff pastry to about 1/8 inch thick. Cut the pastry into rectangles, approximately 4 inches by 6 inches.
Place a generous tablespoon of the sausage and onion mixture along one edge of each pastry rectangle. Top with a sprinkle of shredded Gruyère cheese.
Roll the pastry over the filling to form a log, sealing the edges with a fork. Place the rolls seam-side down on the prepared baking sheet.
Brush the tops of the rolls with the beaten egg.
Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and puffed.
Allow to cool for a few minutes before serving.
Notes
For a spicier kick, add a pinch of red pepper flakes to the sausage mixture.
Substitute the Gruyère cheese with cheddar or mozzarella for a different flavor profile.
