8 ounces udon noodles
1 tablespoon vegetable oil
1 pound ground beef
2 cloves garlic, minced
1 small onion, sliced
1 cup sliced bell peppers (any color)
1 cup sliced carrots
3 green onions, chopped
1/4 cup soy sauce
2 tablespoons oyster sauce
1 tablespoon sesame oil
1 teaspoon sugar
Salt and pepper to taste
Sesame seeds for garnish (optional)
Instructions
Cook the udon noodles according to package instructions. Drain and set aside.
In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the ground beef and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
Add the minced garlic and sliced onion to the skillet. Sauté for 2-3 minutes until the onion becomes translucent.
Stir in the sliced bell peppers and carrots. Cook for another 3-4 minutes until the vegetables are tender.
In a small bowl, mix together the soy sauce, oyster sauce, sesame oil, and sugar. Pour this sauce over the beef and vegetable mixture, stirring to combine.
Add the cooked udon noodles to the skillet. Toss everything together until the noodles are well coated in the sauce and heated through, about 2-3 minutes.
Season with salt and pepper to taste. Remove from heat and stir in the chopped green onions.
Serve hot, garnished with sesame seeds if desired.
Notes
For a vegetarian option, substitute the ground beef with crumbled tofu or tempeh and use vegetable broth instead of oyster sauce.
