2 large chicken breasts (about 1 pound total)
4 slices of bacon, chopped
4 cloves garlic, minced
1 cup grated Parmesan cheese
1 teaspoon Italian seasoning
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil
1 tablespoon chopped fresh parsley (for garnish)
Instructions
Preheat your oven to 400°F (200°C).
In a skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon and drain on paper towels, leaving about 1 tablespoon of bacon grease in the skillet.
Add minced garlic to the skillet and sauté for about 1 minute until fragrant.
In a small bowl, mix together the Parmesan cheese, Italian seasoning, salt, and black pepper.
Rub the chicken breasts with olive oil and then coat them evenly with the Parmesan mixture.
Place the chicken breasts in a baking dish and sprinkle the cooked bacon on top.
Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
Remove from the oven and let rest for 5 minutes before serving. Garnish with chopped parsley.
Notes
For a spicy kick, add a pinch of red pepper flakes to the Parmesan mixture.
Serve with a side of steamed vegetables or a fresh salad for a complete meal.
