4 large eggs
1/4 cup milk
1/2 teaspoon salt
1/4 teaspoon black pepper
6 ounces breakfast sausage, crumbled
1 cup shredded cheddar cheese
4 large flour tortillas
2 tablespoons butter
Optional: salsa or hot sauce for serving
Instructions
In a medium bowl, whisk together the eggs, milk, salt, and black pepper until well combined.
In a large skillet over medium heat, cook the crumbled sausage until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
In the same skillet, pour in the egg mixture and cook, stirring gently, until the eggs are just set, about 3-4 minutes. Remove from heat and stir in the cooked sausage and shredded cheese until melted.
Lay out the flour tortillas on a clean surface. Divide the egg and sausage mixture evenly among the tortillas, placing it in the center of each.
Roll up each tortilla tightly, folding in the sides as you go to secure the filling.
In the same skillet, melt the butter over medium heat. Place the roll-ups seam side down in the skillet and cook until golden brown on all sides, about 2-3 minutes per side.
Remove from the skillet and let cool slightly before slicing in half. Serve warm with salsa or hot sauce if desired.
Notes
For a healthier option, substitute turkey sausage for the regular breakfast sausage.
Add diced bell peppers or onions to the egg mixture for extra flavor and nutrition.
