  • ½ cup unsalted butter, melted
  • 1 cup granulated sugar
  • 4 (8-ounce) packages cream cheese, softened
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sweetened shredded coconut
  • 1 cup caramel sauce
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a medium bowl, combine graham cracker crumbs, cocoa powder, and melted butter. Mix until well combined.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
  4. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
  5. Gradually add the granulated sugar and continue to beat until well combined.
  6. Add the vanilla extract and mix in the eggs, one at a time, ensuring each is fully incorporated before adding the next.
  7. Fold in the shredded coconut gently into the cream cheese mixture.
  8. Pour the filling over the cooled crust in the springform pan.
  9. Bake for 55-60 minutes, or until the center is set and only slightly jiggly.
  10. Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.
  11. Remove from the oven and let it cool to room temperature before refrigerating for at least 4 hours, or overnight for best results.
  12. Once chilled, drizzle the cheesecake with caramel sauce and sprinkle the top with chocolate chips.
