- 1 ½ cups graham cracker crumbs
- ½ cup unsweetened cocoa powder
- ½ cup unsalted butter, melted
- 1 cup granulated sugar
- 4 (8-ounce) packages cream cheese, softened
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup sweetened shredded coconut
- 1 cup caramel sauce
- 1 cup semi-sweet chocolate chips
- Preheat your oven to 325°F (163°C).
- In a medium bowl, combine graham cracker crumbs, cocoa powder, and melted butter. Mix until well combined.
- Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
- Gradually add the granulated sugar and continue to beat until well combined.
- Add the vanilla extract and mix in the eggs, one at a time, ensuring each is fully incorporated before adding the next.
- Fold in the shredded coconut gently into the cream cheese mixture.
- Pour the filling over the cooled crust in the springform pan.
- Bake for 55-60 minutes, or until the center is set and only slightly jiggly.
- Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.
- Remove from the oven and let it cool to room temperature before refrigerating for at least 4 hours, or overnight for best results.
- Once chilled, drizzle the cheesecake with caramel sauce and sprinkle the top with chocolate chips.
- Slice and serve chilled.
Notes
- For a lighter version, consider using reduced-fat cream cheese and a sugar substitute.
- To enhance the flavor, you can add a teaspoon of coconut extract to the cream cheese mixture.
