1 pound breakfast sausage, uncooked
8 ounces cream cheese, softened
1 cup shredded cheddar cheese
1 cup all-purpose flour
1 (10-ounce) can diced tomatoes with green chilies (Rotel), drained
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon cayenne pepper (optional)
Instructions
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a large mixing bowl, combine the uncooked breakfast sausage and softened cream cheese. Mix until well combined.
Add the shredded cheddar cheese, flour, drained Rotel, garlic powder, onion powder, salt, black pepper, and cayenne pepper (if using) to the sausage mixture. Stir until all ingredients are evenly incorporated.
Using your hands or a cookie scoop, form the mixture into 1-inch balls and place them on the prepared baking sheet, spacing them about 1 inch apart.
Bake in the preheated oven for 20-25 minutes, or until the sausage balls are golden brown and cooked through.
Remove from the oven and let cool for a few minutes before serving.
Notes
For a spicier kick, use hot breakfast sausage instead of mild.
You can substitute the cheddar cheese with pepper jack for an extra layer of flavor.
