1 ½ cups graham cracker crumbs
½ cup unsalted butter, melted
1 cup sweetened shredded coconut
1 cup chopped rhubarb (fresh or frozen)
1 cup sweetened condensed milk
1 cup semi-sweet chocolate chips
½ cup chopped pecans or walnuts (optional)
½ teaspoon vanilla extract
¼ teaspoon salt
Instructions
Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or line it with parchment paper for easy removal.
In a medium bowl, combine the graham cracker crumbs and melted butter. Mix until the crumbs are evenly coated. Press the mixture firmly into the bottom of the prepared baking dish to form a crust.
Evenly spread the chopped rhubarb over the crust.
In a separate bowl, mix the sweetened condensed milk, vanilla extract, and salt. Pour this mixture over the rhubarb layer.
Sprinkle the chocolate chips and coconut evenly on top. If using, add the chopped nuts as well.
Bake in the preheated oven for 25-30 minutes, or until the edges are golden and the center is set.
Allow the bars to cool completely in the pan before cutting into squares. For best results, chill in the refrigerator for at least 2 hours before serving.
Notes
For a twist, substitute the rhubarb with diced strawberries or blueberries for a fruity variation.
Add a sprinkle of cinnamon or nutmeg to the graham cracker crust for an extra layer of flavor.
