A delicious and easy recipe for ravioli tossed with fresh tomatoes, asparagus, garlic, and herbs.

  • 1 package (9 ounces) refrigerated cheese ravioli
  • 1 cup cherry tomatoes, halved
  • 1 cup asparagus, trimmed and cut into 1-inch pieces
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried Italian herbs (or 1 tablespoon fresh herbs, chopped)
  • Salt and pepper to taste
  • ¼ cup grated Parmesan cheese
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Cook the ravioli according to package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the asparagus to the skillet and cook for 3-4 minutes, stirring occasionally, until tender but still crisp.
  4. Stir in the cherry tomatoes and dried Italian herbs. Cook for an additional 2-3 minutes until the tomatoes are softened.
  5. Add the cooked ravioli to the skillet and gently toss to combine with the vegetables. Season with salt and pepper to taste.
  6. Remove from heat and sprinkle with grated Parmesan cheese. Toss again to distribute the cheese evenly.
  7. Serve warm, garnished with fresh basil leaves if desired.

Notes

  • For added protein, consider adding cooked chicken or shrimp to the dish.
  • Substitute the asparagus with other vegetables like spinach or zucchini for a different flavor profile.
