A quick and easy breakfast burrito recipe that combines eggs, cheese, and your choice of breakfast meat wrapped in a warm tortilla.

  • 4 large eggs
  • 1/4 cup milk
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled breakfast sausage (or diced cooked bacon)
  • 1/4 cup diced bell pepper
  • 1/4 cup diced onion
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Salsa (optional, for serving)
  • Sour cream (optional, for serving)

Instructions

  1. In a medium bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  2. Heat the olive oil in a large skillet over medium heat. Add the diced onion and bell pepper, cooking until softened, about 3-4 minutes.
  3. Add the crumbled breakfast sausage (or bacon) to the skillet and cook for an additional 2 minutes, stirring occasionally.
  4. Pour the egg mixture into the skillet and cook, stirring gently, until the eggs are fully cooked, about 3-5 minutes. Remove from heat and stir in the shredded cheddar cheese until melted.
  5. Warm the flour tortillas in a separate skillet or microwave for a few seconds until pliable.
  6. Spoon the egg mixture evenly onto the center of each tortilla. Fold in the sides and roll up tightly to form a burrito.
  7. Serve immediately with salsa and sour cream on the side, if desired.

Notes

  • For a vegetarian option, omit the sausage and add more vegetables like spinach, mushrooms, or zucchini.
  • Spice it up by adding diced jalapeños or a sprinkle of hot sauce to the egg mixture before cooking.
