2 large flour tortillas
4 large eggs
1/4 cup milk
1/2 cup shredded cheddar cheese
1/2 cup cooked and crumbled breakfast sausage (or diced cooked bacon)
1/4 cup diced bell pepper
1/4 cup diced onion
Salt and pepper to taste
1 tablespoon olive oil
Salsa (optional, for serving)
Sour cream (optional, for serving)
Instructions
In a medium bowl, whisk together the eggs, milk, salt, and pepper until well combined.
Heat the olive oil in a large skillet over medium heat. Add the diced onion and bell pepper, cooking until softened, about 3-4 minutes.
Add the crumbled breakfast sausage (or bacon) to the skillet and cook for an additional 2 minutes, stirring occasionally.
Pour the egg mixture into the skillet and cook, stirring gently, until the eggs are fully cooked, about 3-5 minutes. Remove from heat and stir in the shredded cheddar cheese until melted.
Warm the flour tortillas in a separate skillet or microwave for a few seconds until pliable.
Spoon the egg mixture evenly onto the center of each tortilla. Fold in the sides and roll up tightly to form a burrito.
Serve immediately with salsa and sour cream on the side, if desired.
Notes
For a vegetarian option, omit the sausage and add more vegetables like spinach, mushrooms, or zucchini.
Spice it up by adding diced jalapeños or a sprinkle of hot sauce to the egg mixture before cooking.
