A quick and easy recipe for stir-fried beef with bok choy, perfect for a weeknight dinner.

Ingredients

Scale
  • 1 pound flank steak, thinly sliced against the grain
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil, divided
  • 3 cloves garlic, minced
  • 1 inch ginger, minced
  • 4 cups bok choy, chopped
  • 1 bell pepper, sliced (any color)
  • 2 tablespoons oyster sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Cooked rice or noodles for serving

Instructions

  1. In a bowl, combine the sliced flank steak, soy sauce, and cornstarch. Mix well and let it marinate for about 15 minutes.
  2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated beef and stir-fry for about 3-4 minutes until browned. Remove the beef from the skillet and set aside.
  3. In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and ginger, stirring for about 30 seconds until fragrant.
  4. Add the chopped bok choy and sliced bell pepper to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender but still crisp.
  5. Return the beef to the skillet and add the oyster sauce and sesame oil. Stir everything together and cook for an additional 2 minutes. Season with salt and pepper to taste.
  6. Serve the stir-fried beef and bok choy over cooked rice or noodles.

Notes

  • For added spice, include sliced red chili peppers or a dash of sriracha sauce when stir-frying.
  • Substitute the bok choy with other vegetables like snap peas or broccoli for a different flavor and texture.
