1 pound pork tenderloin
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon dried thyme
1 teaspoon dried rosemary
1/2 cup chicken broth
1/4 cup fresh lemon juice (about 2 lemons)
1 tablespoon Dijon mustard
1 tablespoon unsalted butter
2 tablespoons fresh parsley, chopped
Instructions
Preheat the oven to 400°F.
Pat the pork tenderloin dry with paper towels. Rub the olive oil over the tenderloin, then season with salt, black pepper, garlic powder, thyme, and rosemary.
In an oven-safe skillet over medium-high heat, sear the pork tenderloin for about 3-4 minutes on each side until browned.
Transfer the skillet to the preheated oven and roast for 15-20 minutes, or until the internal temperature reaches 145°F. Remove from the oven and let the pork rest for 5-10 minutes before slicing.
While the pork is resting, prepare the pan sauce. Place the skillet back on medium heat and add the chicken broth, scraping up any browned bits from the bottom.
Stir in the lemon juice and Dijon mustard, and simmer for 2-3 minutes until slightly thickened.
Remove the skillet from heat and whisk in the butter until melted and smooth. Stir in the fresh parsley.
Slice the pork tenderloin and serve with the lemon herb pan sauce drizzled over the top.
Notes
For added flavor, marinate the pork in olive oil, lemon juice, and herbs for a few hours or overnight before cooking.
You can substitute the pork tenderloin with chicken breast for a different protein option.
