Pistachio Rice Krispie Treats are a sweet and nutty dessert that combines the classic Rice Krispie treat with the rich flavor of pistachios.

  • 1 package (10 oz) mini marshmallows
  • 1 teaspoon vanilla extract
  • 6 cups Rice Krispies cereal
  • 1 cup shelled pistachios, roughly chopped
  • 1/2 cup white chocolate chips (optional)
  • Pinch of salt

Instructions

  1. In a large saucepan, melt the butter over low heat. Add the mini marshmallows and stir until completely melted and smooth. Remove from heat and stir in the vanilla extract and a pinch of salt.
  2. Add the Rice Krispies cereal to the melted marshmallow mixture. Stir until the cereal is evenly coated.
  3. Gently fold in the chopped pistachios and white chocolate chips, if using.
  4. Lightly grease a 9×13-inch baking dish with butter or cooking spray. Pour the mixture into the dish and press it down evenly with a spatula or your hands.
  5. Allow the treats to cool at room temperature for about 30 minutes before cutting into squares.

Notes

  • For a fun twist, try adding dried cranberries or chocolate chips for extra flavor and texture.
  • If you prefer a nut-free version, simply omit the pistachios and add more Rice Krispies or use sunflower seeds instead.
