2 cups all-purpose flour
1 cup granulated sugar
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, softened
1 large egg
1 teaspoon vanilla extract
1 can (20 ounces) crushed pineapple, drained
1/4 cup brown sugar
1 tablespoon cornstarch
1 teaspoon lemon juice
Instructions
Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish or line it with parchment paper for easier removal.
In a large mixing bowl, combine the flour, granulated sugar, baking powder, and salt. Mix well.
Add the softened butter, egg, and vanilla extract to the dry ingredients. Use a fork or pastry cutter to mix until crumbly. Reserve 1 cup of the crumb mixture for topping.
Press the remaining crumb mixture evenly into the bottom of the prepared baking dish to form the crust.
In another bowl, mix the drained crushed pineapple, brown sugar, cornstarch, and lemon juice until well combined. Spread the pineapple mixture evenly over the crust.
Sprinkle the reserved crumb mixture over the pineapple layer.
Bake in the preheated oven for 30-35 minutes, or until the top is golden brown.
Allow the bars to cool completely in the pan before cutting into squares.
Notes
For a tropical twist, add shredded coconut to the crumb mixture or the pineapple filling.
Substitute the crushed pineapple with other fruits like peaches or blueberries for different flavor profiles.
