1 cup crushed pineapple, drained
1 cup powdered sugar
1 cup shredded coconut
1 cup chopped pecans
1 teaspoon vanilla extract
1/2 teaspoon almond extract
1/4 cup finely chopped maraschino cherries (optional)
1/4 cup mini chocolate chips (optional)
Instructions
In a medium bowl, combine the drained crushed pineapple, powdered sugar, shredded coconut, chopped pecans, vanilla extract, and almond extract. Mix until well combined.
If using, fold in the chopped maraschino cherries and mini chocolate chips.
Cover the mixture and refrigerate for at least 1 hour to allow it to firm up.
Once chilled, use your hands to form the mixture into small balls, about 1 inch in diameter.
Roll each ball in additional shredded coconut or chopped pecans for coating, if desired.
Place the finished balls on a parchment-lined baking sheet and refrigerate for another 30 minutes to set.
Serve chilled or at room temperature. Enjoy your festive treat!
Notes
For a tropical twist, add a teaspoon of lime zest to the mixture.
To make these a bit more indulgent, dip the balls in melted dark chocolate before chilling.
