A creamy and comforting soup inspired by the classic Philly cheesesteak, loaded with tender beef, peppers, and melted cheese.

Ingredients

  • 1 pound beef sirloin, thinly sliced
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup heavy cream
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1 cup provolone cheese, shredded
  • 1/2 cup cream cheese, softened
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat the olive oil over medium-high heat. Add the sliced beef and cook until browned, about 5 minutes. Remove the beef and set aside.
  2. In the same pot, add the diced onion, green bell pepper, and red bell pepper. Sauté for about 5 minutes until the vegetables are softened.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Return the beef to the pot and pour in the beef broth. Bring to a simmer and cook for 10 minutes.
  5. Stir in the heavy cream, Worcestershire sauce, salt, black pepper, and paprika. Allow to simmer for another 5 minutes.
  6. Reduce the heat to low and add the provolone cheese and cream cheese. Stir until the cheeses are melted and the soup is creamy.
  7. Serve hot, garnished with fresh parsley.

Notes

  • For a spicier version, add sliced jalapeños or a dash of hot sauce.
  • Substitute the beef with chicken or turkey for a lighter option.
