3 to 4 pounds pork shoulder (bone-in or boneless)
1 tablespoon kosher salt
1 tablespoon black pepper
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon dried oregano
1 tablespoon ground cumin
1 teaspoon smoked paprika
1/2 cup fresh orange juice
1/4 cup fresh lime juice
1/4 cup olive oil
6 cloves garlic, minced
1/4 cup fresh cilantro, chopped (optional)
Instructions
Preheat your oven to 300°F.
In a small bowl, combine the salt, black pepper, garlic powder, onion powder, oregano, cumin, and smoked paprika. Mix well to create a spice rub.
Pat the pork shoulder dry with paper towels. Rub the spice mixture all over the pork, ensuring it gets into any crevices.
In a separate bowl, whisk together the orange juice, lime juice, olive oil, and minced garlic. Pour this marinade over the seasoned pork, making sure it is well coated. If time allows, cover and refrigerate for at least 4 hours or overnight for maximum flavor.
Place the marinated pork in a roasting pan, skin side up. Cover the pan tightly with aluminum foil. Roast in the preheated oven for about 4 to 5 hours, or until the meat is tender and easily pulls apart with a fork.
Remove the foil during the last 30 minutes of cooking to allow the skin to crisp up. If desired, you can increase the oven temperature to 425°F for the last 15 minutes for extra crispiness.
Once done, remove the pork from the oven and let it rest for 15 to 20 minutes before slicing. Serve with the pan juices drizzled over the top and garnish with fresh cilantro if desired.

For added flavor, try marinating the pork with additional spices like chili powder or adding a few bay leaves to the roasting pan.
