Pecan Pie Balls are a delightful sweet treat that combines the rich flavors of pecans and chocolate in a bite-sized form.

  • 1 cup finely chopped pecans
  • 1 cup graham cracker crumbs
  • 1/2 cup powdered sugar
  • 1/2 cup light corn syrup
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips (for coating)

Instructions

  1. In a large mixing bowl, combine the chopped pecans, graham cracker crumbs, powdered sugar, corn syrup, cocoa powder, vanilla extract, and salt. Mix until well combined and a dough forms.
  2. Using your hands, roll the mixture into small balls, about 1 inch in diameter. Place the balls on a baking sheet lined with parchment paper.
  3. Once all the mixture is rolled into balls, refrigerate for at least 30 minutes to firm up.
  4. While the balls are chilling, melt the chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth.
  5. Remove the chilled balls from the refrigerator. Dip each ball into the melted chocolate, ensuring they are fully coated. Return them to the parchment-lined baking sheet.
  6. Once all the balls are coated, refrigerate again for about 15 minutes to set the chocolate.

Notes

  • For a caramel twist, drizzle melted caramel over the chocolate-coated balls before serving.
  • Substitute walnuts or almonds for pecans for a different flavor profile.
